Tomato Spice Cake

- 2 Cups flour shopping list
- 1 cup sugar shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon cinnamon shopping list
- ½ teaspoon nutmeg shopping list
- ½ teaspoon cloves shopping list
- ½ teaspoon salt shopping list
- 1 (8-oz.) can tomato sauce shopping list
- 1 teaspoon baking soda shopping list
- 1 egg, beaten shopping list
- ½ cup vegetable oil shopping list
- 1 cup chopped walnuts shopping list
- 1 cup raisins shopping list
- cream cheese frosting (See recipe below) shopping list
How to make it
- Sift together flour, sugar, baking powder, spices and salt.
- Add tomato sauce to which baking soda has been dissolved.
- Add egg, oil, nuts and raisins. Mix well. Pour into a greased Bundt-type pan.
- Bake at 350 degrees for 30 minutes.
- Cool completely and frost with cream cheese frosting.
- Cream Cheese Frosting
- 1 (3-oz.) package cream cheese, softened
- ¼ stick butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Beat until smooth and creamy.
- The number of servings depends on the size of the slices.

This sounds so rich and delicious. And the tomato sauce is loaded with lycopene so you are really getting some health benefits also.
