James Barbers Pan Haggerty For Two Recipe
From the marvelous James Barber's (The Urban Peasant) "Cooking for Two" cookbook. This is good for a side dish or for breakfast. Miss you, James!

Ingredients
  • 3 Tbs. vegetable oil (or canola, which is what I use)
  • 3 small potatoes, thinly sliced
  • 1 small onion, thinly sliced
  • 1/4 lb. cheddar cheese, grated (1 cup)

Directions
  1. Heat the oil in a frying pan over medium-high heat. Reduce the heat to low and lay one-third of the potato slices in the bottom of the pan and lay one-third of the onion slices on top of that. Sprinkle with half of the grated cheese. Top with another layer of potatoes and another layer of onions. Sprinkle the rest of the cheese on top. Cover with the remaining onions and finally with the rest of the potatoes. Cover and cook for 20 to 25 minutes.
  2. Remove the lid and invert a plate over the pan. Flip the pan over so the potato mixture winds up on the plate, cooked side up. Add a bit more oil to the pan, and slide the potatoes back into the pan to cook the other side. Cook for 10 minutes, covered, then serve.
