Chicken Tortilla Bake

- 3 TBSPS olive oil. shopping list
- 1 cup sliced onion. shopping list
- 1 large clove of garlic. shopping list
- 1 TBSP chili powder--I use hot chili powder. shopping list
- 1 TSP ground cumin. shopping list
- 1/4 TSP pepper--I use fresh coarse gound pepper. shopping list
- 1 can 14.5 ounces diced tomatoes. shopping list
- 6 corn tortillas (6inch). I use burrito size and flour not corn. shopping list
- vegetable oil. shopping list
- 1/2 cup sour cream. shopping list
- 2 cups shredded mexican cheese mixture or monterey jack cheese--I use pepper jack. shopping list
- 2 cups of shredded cooked chicken. I use 6 chicken breasts shredded make a little more than 2 cups because I double the recipe shopping list
- 6 canned whole green chiles,cut in half lenghywise--I use diced and mix them with the diced chiles and sour cream. shopping list
How to make it
- Heat 1 tablespoon of olive oil in a large skillet over medium high heat. Add onion,garlic,chili powder,cumin,and pepper,cook,stirring frequently,for 5 minutes--I double this mixture this sauce is out of this world. I made this today 02-05-09 and put some of the tomato juice in with the onions and spices and it worked a lot better the spices didn't stick to the pan as much.
- Place onion mixture in a blender container; add tomatoes. Blend until smooth--if you double might have to blend in two batches.
- Add remaining 2 tablespoons of olive oil to the skillet over medium high heat. Stir in pureed tomato mixture. cook stirring constantly,until sauce cooks down and thickens , about 5-7 minutes. Transfer sauce to a bowl; set aside.
- Wipe skillet clean. Pour vegetable oil into skillet,to a depth of about 1/4 inch. heat over medium high heat; fry tortillas,one at a time,just a few seconds on each side. Transfer tortillas to paper towel to drain.I turn on the broiler and broil each side WATCH CLOSELY AS TO NOT BURN. and I break my tortillas in pieces after broiling to cover the whole dish(cuts out some fat)
- Place 2 tortillas in a shallow 2-quart baking dish. Layer with about one-quarter of the sauce,one quarter of the sour cream mixture,one quarter of the shredded cheese,and 1 cup of the chicken. Top with 2 more tortillas, repeat to make another layer. top with remaining tortillas,suuce,sour cream,and cheese. Cover casserole with foil and bake at 350 degrees for about 30 minutes. Cool chicken casserole slightly before serving. If you double might have to make 3 layers. I top with homemade salsa or Pace and set back and enjoy!!!!
