Ingredients

How to make it

  • In large bowl whisk together the flour, baking powder, salt and sugar.
  • In a separate bowl combine the egg, milk and melted butter.
  • Add egg mixture to flour mixture and whisk until just combined.
  • The batter should have small lumps.
  • Do not overmix as the pancakes will be tough.
  • Heat a frying or griddle over medium high heat until hot.
  • Using a pastry brush, brush cooking surface with a little melted butter.
  • Pour about 1/4 cup of batter into pan, spacing pancakes a few inches from each other.
  • When bubbles appear on the top surface of the pancakes, 2 to 3 minutes, turn cakes.
  • Cook until lightly browned, about 1 to 2 minutes.
  • Serve immediately with butter and/or maple syrup.
  • Makes about 8 3" cakes OR 3 8" cakes (I made 8"ers!)
  • For blueberry pancakes, fold in blueberries.
  • For bacon pancakes, fold in chipped up bacon.

    I opened up the refrigerator and no milk!! I already had everything else all mixed so I used water. They came out great! Not the usual golden brown but still very good. These are pretty sweet, which is OK by me. I notice in the instructions the mention of an egg. Went to joyofbaking.com and there is supposed to be an egg in this but I didn't see that until after I was done.
    Added a picture and put these in IMI on 1/10/15.

    Hi! I made these pancakes yesterday for breakfast, and they were great. The only thing is, I'm not sure why the batter was a more liquidy than i'm usually used to so they came out more Crepe'ish thank pancakish. Lucky for me I love crepes more than pancakes so it was a nice compromise between the rest of my family and me LOL. This recipe is definitely a nice cross breed of your traditional pancake and a crepe. Nice Creation! :))

    Be afraid.. Be very afraid! These actually be the best pancakes you'll ever eat and you'll NEVER, EVER go back to IHOP again in your lifetime, Billy, unless you're in L'ville for a game and they are the only pancakes available! Thanks for the 5 syrup holders!
