Pancakes

- 1 cup (140 grams) all purpose flour shopping list
- 1 1/2 teaspoons (7 grams) baking powder shopping list
- 1/4 teaspoon salt shopping list
- 2 tablespoons (28 grams) white sugar shopping list
- 1 cup (240 ml) milk shopping list
- 2 tablespoons (28 grams) unsalted butter, melted shopping list
- Extra melted butter for pan shopping list
How to make it
- In large bowl whisk together the flour, baking powder, salt and sugar.
- In a separate bowl combine the egg, milk and melted butter.
- Add egg mixture to flour mixture and whisk until just combined.
- The batter should have small lumps.
- Do not overmix as the pancakes will be tough.
- Heat a frying or griddle over medium high heat until hot.
- Using a pastry brush, brush cooking surface with a little melted butter.
- Pour about 1/4 cup of batter into pan, spacing pancakes a few inches from each other.
- When bubbles appear on the top surface of the pancakes, 2 to 3 minutes, turn cakes.
- Cook until lightly browned, about 1 to 2 minutes.
- Serve immediately with butter and/or maple syrup.
- Makes about 8 3" cakes OR 3 8" cakes (I made 8"ers!)
- For blueberry pancakes, fold in blueberries.
- For bacon pancakes, fold in chipped up bacon.
