I have never had any "luck" making pancakes! I used this recipe from Joyofbaking.com yesterday and was amazed at what deliciousness "I" had created! I can't believe it's this easy!

Ingredients
  • 1 cup (140 grams) all purpose flour
  • 1 1/2 teaspoons (7 grams) baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons (28 grams) white sugar
  • 1 cup (240 ml) milk
  • 2 tablespoons (28 grams) unsalted butter, melted
  • Extra melted butter for pan

Directions
  1. In large bowl whisk together the flour, baking powder, salt and sugar.
  2. In a separate bowl combine the egg, milk and melted butter.
  3. Add egg mixture to flour mixture and whisk until just combined.
  4. The batter should have small lumps.
  5. Do not overmix as the pancakes will be tough.
  6. Heat a frying or griddle over medium high heat until hot.
  7. Using a pastry brush, brush cooking surface with a little melted butter.
  8. Pour about 1/4 cup of batter into pan, spacing pancakes a few inches from each other.
  9. When bubbles appear on the top surface of the pancakes, 2 to 3 minutes, turn cakes.
  10. Cook until lightly browned, about 1 to 2 minutes.
  11. Serve immediately with butter and/or maple syrup.
  12. Makes about 8 3" cakes OR 3 8" cakes (I made 8"ers!)
  13. For blueberry pancakes, fold in blueberries.
  14. For bacon pancakes, fold in chipped up bacon.

Be afraid.. Be very afraid! These actually be the best pancakes you'll ever eat and you'll NEVER, EVER go back to IHOP again in your lifetime, Billy, unless you're in L'ville for a game and they are the only pancakes available! Thanks for the 5 syrup holders!

Hi! I made these pancakes yesterday for breakfast, and they were great. The only thing is, I'm not sure why the batter was a more liquidy than i'm usually used to so they came out more Crepe'ish thank pancakish. Lucky for me I love crepes more than pancakes so it was a nice compromise between the rest of my family and me LOL. This recipe is definitely a nice cross breed of your traditional pancake and a crepe. Nice Creation! :))
