Asparagus and Brie Soup

- 1Tbs olive oil shopping list
- 2Tbs butter shopping list
- 1c onion,rough chop shopping list
- 1c leeeks,white only and rough chop shopping list
- 1/2lb potatoes,peeled and rough chop shopping list
- 2Tbs kosher salt shopping list
- 1/8tsp nutmeg shopping list
- 1Tbs fresh dill,rough chop shopping list
- 2tsp fresh thyme leaves shopping list
- 2tsp black pepper shopping list
- 3/4c white wine shopping list
- 3c chicken stock shopping list
- 3c whipping cream(or half and half) shopping list
- 3/8lb brie,peeled and diced shopping list
- 11/4lbs asparagus,white bottoms removed and slice crosswise in small pieces shopping list
How to make it
- Heat butter in oil till butter froths. Add onion,leeks,potato and salt and sweat over med. heat until onions begin to turn translucent. Do not let vegetables brown. Add herbs and spices and stir well.
- Add chicken stock and cream and bring to boil. Reduce heat,simmer for 10 mins.. Add brie and asparagus and simmer until brie is melted and potatoes are very soft. Puree in small batches and put through a sieve before servoing or storing(I use emersion blender right in the pot).

Oh good heavens,this sounds awesome. We ate a lot of asparagus this weekend and I would love to make this soup. Kid is a big brie lover.
