Delicious cream of asparagus soup with white wine and brie cheese.

Ingredients
  • 1Tbs olive oil
  • 2Tbs butter
  • 1c onion,rough chop
  • 1c leeeks,white only and rough chop
  • 1/2lb potatoes,peeled and rough chop
  • 2Tbs kosher salt
  • 1/8tsp nutmeg
  • 1Tbs fresh dill,rough chop
  • 2tsp fresh thyme leaves
  • 2tsp black pepper
  • 3/4c white wine
  • 3c chicken stock
  • 3c whipping cream(or half and half)
  • 3/8lb brie,peeled and diced
  • 11/4lbs asparagus,white bottoms removed and slice crosswise in small pieces

Directions
  1. Heat butter in oil till butter froths. Add onion,leeks,potato and salt and sweat over med. heat until onions begin to turn translucent. Do not let vegetables brown. Add herbs and spices and stir well.
  2. Add chicken stock and cream and bring to boil. Reduce heat,simmer for 10 mins.. Add brie and asparagus and simmer until brie is melted and potatoes are very soft. Puree in small batches and put through a sieve before servoing or storing(I use emersion blender right in the pot).

Well HELLO...what's not to love aobut this!!?? Gonna short out the keyboard drooling...lol Great post ... can't wait to try this one.


I'm back to tell you that I made this over the weekend and it came out awesome! My hubby likes chunky soups, so I left the asparagus tips whole, instead of pureeing everything. That added a little texture to the soup, too. I only used 1 tbsp. of salt, instead of 2, and my brie cheese got soft, but refused to melt, so I finally just pureed it, and it was fine. Added a pic for you, it does show those asparagus tips, so feel free to change it when you make it next time.


I definitely know I would love this!!! It looks and sounds so mouth watering!!!
