Lemon Dimples

- 11/2 sticks unsalted butter(3/4c),softened shopping list
- 1/2c confectioners' sugar,plus extra for dusting shopping list
- 1/4c granulated sugar shopping list
- 1 large egg shopping list
- 1tsp grated lemon zest shopping list
- 1Tbs lemon juice shopping list
- 1tsp vanilla shopping list
- 1tsp baking powder shopping list
- 2c flour shopping list
- 1 scant cup prepared lemon curd shopping list
How to make it
- Beat butter and sugars in large bowl with mixer on medium speed until fluffy. Beat in egg,lemon zest and juice and vanilla. On low speed,beat in baking powder,then flour,until incorporated..Cover,chill dough 1 hour. Place lemon curd into small ziploc food storage bag;seal bag.
- Heat oven to 350. You'll need baking sheets lined with non-stick foil,liners or parchment. Shape scant Tbsps. of doug into balls;place 2" apart on prepared sheets. With index finger,make a deep indentation in center of each. Snip tiny corner of ziploc bag and pipe lemon curd into dough indentations to fillcompletely(about 1tsp. per cookie).
- Bake 15 mins. or till cookie edges just begin to lightly brown. Coo completely on baking sheet on wire rack. Dust cookie edges with confectioners' sugar before serving.
