My husband absolutely loves this!! A seafood lasagna that is so full of flavor. A comfort food you won't regret, all you need is a veggie and a glass of wine!

Ingredients
  • 8-10 sheets of lasagna
  • 1/2 lb. scallops ---- USA wild
  • 1/2 lb. fresh uncooked shrimp--USA wild-- peeled deveined, Save the shells for fish stock.
  • 8 oz. crab
  • 6 oz can of skinless boneless Salmon drained (you can use fresh cooked)
  • WINE SAUCE

  • 8 oz. fresh mushrooms sliced
  • 1 minced carrot
  • 1 minced stalk of celery
  • 1 sm. diced onion
  • 2 Tbs. unsalted butter
  • 1 tsp. thyme
  • 2 Tbs. fresh chopped parsley
  • 2 Tbs. fresh chopped dill
  • 3/4 cup of a good dry white wine
  • FISH STOCK

  • 2 cups water
  • shrimp shells
  • 1 1/2 tsp old bay seasoning
  • 1 tsp. celery seeds
  • 1 tsp. fennel seeds
  • CHEESE BLEND
  • ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • 1 cup cottage cheese or ricotta
  • 3/4 cup Goat cheese with basil and roasted garlic
  • 1 egg beaten
  • CREAM SAUCE
  • ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • 1 cup of half & half
  • 1/2 Parmesan cheese
  • 2 Tbs . wondra or flour mixed with cold half & half
  • 1 Tbs. fresh lemon juice
  • Kosher salt and white pepper to taste
  • 2 cups of Mozzarella cheese for topping

Directions
  1. Clean shrimp slice lengthwise and refrigerate
  2. In a small pot put shrimp shells, water, old bay seasoning, celery deed. and fennel. Cook till shells turn pink and liquid reduces to 1 1/2 cup. Strain thru coffee filter to remove solids.
  3. Prepare lasagna noodles according to pkg. directions.
  4. In a large pan melt butter add carrots, celery,onion, mushrooms and cook for about 15 minutes.
  5. Add thyme, parsley, dill, and wine. continue cooking until liquid is almost gone.
  6. Continue to cook
  7. Add liquid from stock , flour, half & half, Parmesan cheese, lemon juice, salt and pepper.
  8. When thoroughly mixed add all seafood, Take off heat
  9. In a separate bowl mix goat cheese, cottage cheese and egg.
  10. Preheat Oven 375 F
  11. Spray a 9x12 baking dish
  12. Spread 1/2 cup of sauce over bottom of baking dish
  13. Line lasagna noodles over sauce
  14. Spread 1/3 of sauce over noodles, and dolp with 1/2 of cheese mixture.
  15. Repeat on second layer of noodles.
  16. On third layer of noodles top with remaining sauce and mozzarella cheese
  17. Bake 375 F for 40 min or until top is golden brown.

How could you not love this? This sounds amazing! Great combo of seafood here, paired up with delicious sauce and cheeses! This is like a piece of seafood heaven! High 5, my friend!

This is definitely made with an amazing amount of love and devotion to detail. A heavenly sauce and seafood selection pared with wonderful vegetables and herbs.
