Easy Creamy Egg Salad Recipe
We always made these for showers without the crusts for the gals... with crusts for game night.. I like it best on a croissants with lettuce and a thin slice of tomato... So good on a hot summer day! Enjoy!

Ingredients
  • 2 8 ounce packages cream cheese softened
  • 1/2 cup good mayonnaise
  • 1 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 10 hard-boiled eggs, chopped
  • 1 medium onion, chopped fine
  • 1-2 stalks celery chopped fine
  • White pepper to taste.

Directions
  1. Let cream cheese sit on counter to soften, not melt!
  2. In a bowl, beat cream cheese, mayonnaise, mustard, paprika, salt and white pepper.
  3. Stir in by hand celery, onions and eggs.
  4. Serve on lettuce leaves, or on bread, or on croissants..
  5. This makes about 5 1/2 cups
  6. Enjoy!
