Roast Chicken With Pomegranate Jus Recipe

From seriouseats "Eat for Eight Bucks" series, you may thicken the jus by adding bits of equal parts unsalted butter and flour mixed (beurre manie). Added to the jus, it will thicken as it cooks.

Ingredients
  • One 2 to 3 pound chicken
  • Coarse kosher salt
  • 1 tablespoon vegetable oil
  • Small carrot, coarsely chopped
  • Small onion, coarsely chopped
  • 2 cups water
  • 1 tablespoon pomegranate molasses or more to taste
  • 1 teaspoon sugar or more to taste
  • Salt and freshly ground pepper

Directions
  1. Preheat oven to 450 degrees F.
  2. Rinse chicken and pat dry.
  3. Trim excess fat and discard.
  4. Remove wing tips and reserve along with chicken neck.
  5. Salt chicken liberally and evenly on every side.
  6. Place in roasting pan and roast, uncovered, for 40 to 50 minutes OR until crisp and golden.
  7. To check doneness, pierce the thickest part of the thigh with a skewer and make sure juices run clear.
  8. Once the chicken is in the oven, heat oil in a large saucepan and cook the onion, carrot and reserved chicken trimmings until very well browned.
  9. Add water and simmer gently until chicken is ready.
  10. Remove chicken from oven and allow to rest.
  11. Meanwhile strain the simmering liquid through a chinois or fine sieve.
  12. Return strained liquid to saucepan.
  13. Add molasses, sugar and juices from roasting pan, including any crusty brown bits.
  14. Reduce by half over high heat.
  15. Adjust seasonings, add more molasses or sugar, if desired.
  16. Quarter the chicken and serve 1 to 2 pieces per person on a bed of sauteed winter greens, drizzled with pomegranate jus.

There is something so comforting about a perfectly roasted chicken, and this recipe seems perfect. A 5 and my thanks for another great recipe.


Maywest...I can't find it out here either, so I usually make my own by reducing organic, not-from-concentrate pomegranate juice with a little sugar (I like 8:1 juice-to-sugar ratio) and the juice of one lemon. The beauty of making your own...you can adjust the tartness/sweetness to suit your preferences! I let mine reduce over low low heat until it's reached ~1/3 its original volume. Then you can jar it up, let it cool, seal it and stick it in the fridge!


This looks great, I am always looking for something to do with chicken that is not the same old thing.
