Soba Noodles with Edamame and Chile

- 1/2 lb soba noodles, cooked al dente and drained shopping list
- 1 tsp sesame oil shopping list
- 1 tbsp olive oil shopping list
- 3 garlic cloves, minced shopping list
- 1 tbsp grated fresh ginger shopping list
- 6 green onions, thinly sliced shopping list
- 1 cup unshelled edamame beans shopping list
- 1 red pepper, cut in matchsticks shopping list
- 1 red chile pepper, minced shopping list
- 1 tbsp soy sauce shopping list
- 1/2 tsp honey shopping list
- 1 tbsp lemon or lime juice shopping list
How to make it
- Toss cooked noodles with sesame oil and set aside.
- Heat olive oil in a skillet.
- Add garlic and ginger and sauté until fragrant, about 1 minute.
- Add edamame and red pepper. Cook 2 minutes.
- Add noodles, chile pepper, soy sauce, honey and lime juice.
- Toss to combine and serve.
