How to make it

  • Preheat oven to 200. Sprinkle chicken with salt and pepper;dredge in flour.
  • Warm 1Tbs butter and 1 Tbs oil in large skilet over med-high heat until butter foams. Add half of cutlets and cook till browned,about 4 mins. Turn and cook until firm and browned on both sides,about 3 mins. longer. Transfer to a plate and loosely cover with foil to keep warm.
  • Add another Tbs. butter and oil to skillet and repeat with remaining cutlets. Add to platter;keep warm in oven.
  • Add worcestershire sauce,vinegar and chicken broth to empty skillet and bring to a boi,scraping up browned bits from bottom of pan with wooden spoon. Boil,stirring occasionally till thickened,about 5 mins. Remove from heat and stir in remaining 1 Tbs butter until it is melted. Season sauce with salt and pepper. Pour sauce over chicken and garnish with chopped parsley. Serve immediately.

    I tried this tonight, and wow!! Besides the flavor, I couldn't believe how moist the chicken was. I happened to have some bacon fat, and substituted that for the oil.

    yes, yes, yes!! I love Worcestershire w/ chicken! Mom used to cook it in the oven! 5 for sure!
