- 1/2 c olive oil shopping list
- 1 large onion; diced fine shopping list
- 2 garlic cloves; minced shopping list
- 1 1/2 lb beef or chicken cubes; boneless shopping list
- 1 ts salt shopping list
- 1 dash pepper shopping list
- 1/4 c dry white wine shopping list
- 1/4 c tomato paste shopping list
- 3 c water; divided shopping list
- 1 c orzo; uncooked shopping list
- grated Kefalotiri cheese; as needed shopping list
How to make it
- In pressure cooker, add olive oil, meat, salt and pepper and saute over high heat until nicely browned.
- Add onion, garlic cloves and saute for 5 more minutes.
- Add white wine, tomato paste and 2 1/2 cups of water.
- Stir once more and lock pressure cooker.
- Cook for 1/2 hour to 45 minutes until meat is tender.
- Set meat and broth aside.
- Layer orzo on the bottom of a baking dish.
- Pour meat and broth over the orzo.
- Stir and add 1/2 cup water and some grated cheese on top.
- Bake, uncovered, at 375°F until juices are absorbed.
- Sprinkle additional grated cheese over dish and serve.
