Ingredients
  • A mess of medium summer squash (about 6), sliced
  • 1 medium onion, sliced thinly or diced
  • A hunk (about 1/4 cup) butter
  • salt & pepper

Directions
  1. Melt butter in large skillet.
  2. Add onion and cook just till tender.
  3. Add yellow squash and continue cooking over medium heat, stirring until squash begins to soften.
  4. Cover and continue cooking over low heat until nice and tender (usually about 20-25 minutes).
  5. Add salt and pepper to taste.

This is something fabulous that we eat all summer long. Thanks for the reminder...gotta go get some squash.....


Thanks so much!! I made this tonight!! I added a garlic clove with the onion before I put in the squash. It was a hit!!


Top this off with a sprinkle of parmesan cheese and top with a cheddar mix and heat just to melt!
My favorite!


I have several yellow squash from the garden. I like to add mushrooms to this. When we use this for a main course, I even scramble eggs in this.


Squash has taken over my garden..LOL

This sounds like a good way to use them.
