Found this years ago in my Mom's Bed and Breakfast Inns cookbook (not the exact name). I have modified it somewhat. It's always a big hit.

Ingredients
- 1 lb Salmon (or substitute any other fish)
- 1/3 cup Mayonnaise
- 1/2 teaspoon Salt
- 1 Onion, sliced thin
- 1/2 cup Grated cheese ( your favorite) **
- 1 Tomato, sliced thin
- dash Paprika or black pepper
- ** I like to use 1/2 block cream cheese, 1/2 t capers and 1/2 - 1 t. chives mixed with the mayo before spreading
Directions
- Place fish in oven-proof baking dish.
- Sprinkle with salt.
- Spread with mayonnaise like you are frosting a cake.
- Best to create a seal to lock in moisture.
- Top with onion, tomato & cheese.
- Add paprika or pepper.
- Bake at 375 for 45 min.
- Add small amount of water to dish if necessary.

I use the mayo, plus some seasonings, on baked fish, but just love the additional ingredients in this recipe. Thanks so much for sharing it...=)

OK I made this last night. Great dish, reminds me of Russian cooking. They always bake fish topped with mayo and onions. This was so simple, too! I used cheddar cheese and did add some capers to the mayo like you suggested. Added a picture. Thanks again for the great post!
