By adding a batter of eggs,milk,flour and baking powder,a simple quesadilla filling is turned into a quick Southwestern -inspired quiche. The "crust" is simply a greased tortilla.This was in Cooks Country.

This is very good! I made it as written except I didn't use a rotisserie chicken. I used 3 boneless skinless chicken breasts. I sauteed the chicken in onions, garlic, chili powder and cumin to give a little extra flavor. Everything else was as written. It browned up very nicely and sliced easily also! I topped it with salsa and sour cream as suggested! It was perfect! The whole family loved it! I added a photo!
