How to make it

  • Adjust oven rack to middle position and heat oven to 450. Grease 9" pie plate. Press tortilla into prepared pan and spray lightly with cooking spray.Toss chicken,cilantro,jalapenos,1c cheese,1/2tsp salt and 1/2 tsp pepper in large bowl till combined. Spoon over tortilla.
  • Whisk eggs,milk,flour,baking powder and 1/2tsp salt in bowl until smooth. Slowly pour over filling,then sprinkle with remaining cheese. Bake until surface is golden brown,about 20 mins. Let cool 5 mins. Cut into wedges and serve. serve with sour cream and salsa.

    My grandma gave me this recipe from one of her many cookbooks last year and i made it as written the first time, but my kids thought the jalepenos were too hot, so i switched to using green chiles (diced in the can) i also use chives, and garlic, and salt and pepper both mixes. Tonight I made it in a pie crust instead of with the tortilla, and i used ricotta, i mixed all the ingredients together including the wet ingredients and then baked it and it came out super good. Adding the cheese to the top at the end of baking will also keep it from burning or getting hard.

    This is very good! I made it as written except I didn't use a rotisserie chicken. I used 3 boneless skinless chicken breasts. I sauteed the chicken in onions, garlic, chili powder and cumin to give a little extra flavor. Everything else was as written. It browned up very nicely and sliced easily also! I topped it with salsa and sour cream as suggested! It was perfect! The whole family loved it! I added a photo!

    I love the way this sounds! Maybe another tortilla could be placed on top and covered with cheese, so that it will have a top crust! I'm saving this one in the 'make soon' file!
