Hara Masala is just another curry base that, when added to dishes, gives it so much flavour and depth. Some curries will boil the meat in hara masala for 40 minutes before continuing with their recipe. This makes for incredibly tender, tasty meat.

Ingredients
  • 1 large handful of fresh cilantro - washed and roots removed but keep the stems
  • 6-8 mint leaves
  • 3 large garlic cloves
  • 2 inches of ginger - peeled
  • 1-5 green chillies like jalapenos - seeded *remove seeds(too bitter) but use as many chillies as you like for desired heat
  • 1/2 large onion - red or yellow
  • 2 green onions (scallions)
  • Water to loosen

Directions
  1. Chop all of the ingredients into small enough pieces to fit in your processor or blender and grind to a smooth paste. Add only as much water as needed to facilitate grinding.
  2. Add a tablespoon to soups or stews or use as marinade for meat. Can even be used as a condiment.
