Hara Masala - Green Curry Base Recipe

Ingredients

1 large handful of fresh cilantro - washed and roots removed but keep the stems

6-8 mint leaves

3 large garlic cloves

2 inches of ginger - peeled

1-5 green chillies like jalapenos - seeded *remove seeds(too bitter) but use as many chillies as you like for desired heat

1/2 large onion - red or yellow

2 green onions (scallions)

Water to loosen

Directions

Chop all of the ingredients into small enough pieces to fit in your processor or blender and grind to a smooth paste. Add only as much water as needed to facilitate grinding.

Add a tablespoon to soups or stews or use as marinade for meat. Can even be used as a condiment.
