Strawberry Cheese Bites

Little tart shells filled with a lemony creamy filling, with a bit of strawberry surprise.
Ingredients
- 1/2 cup of strawberry preserves shopping list
- 1 and 1/2 packages of those little sweet tart shells from the freezer case, (6.3 oz. box) shopping list
- 8 oz. of cream cheese, softened shopping list
- 1/4 cup of limoncello shopping list
- 2 tbsp of lemon juice shopping list
- 3/4 cup of whipping cream shopping list
- 1/4 cup of confectioner's sugar shopping list
- 1/2 tsp. of vanilla extract shopping list
- 1/2 tsp of grated lemon zest shopping list
- 2 quarts of fresh strawberries, washed, stemmed and halved shopping list
How to make it
- Put a 1/2 tsp of strawberry preserves in the bottom of each tart shell.
- This is easier to do if the preserves are not refigerated, but at room temperature.
- Beat the cream cheese with the Limoncello and the lemon juice.
- You can substitute some lemonade concentrate if you don't want to use the Limoncello. Set aside.
- Whip the whipping cream, adding sugar and extract with lemon zest til soft peaks form.
- Fold whipped cream to cream cheese mixture.
- Fill each tart shell with lemony cheese filling.
- Top with halved strawberry.
