Texas Corn With Onions And Peppers

- 2 pound bag frozen corn kernels thawed shopping list
- 1 large yellow onion finely diced shopping list
- 1 green bell pepper shopping list
- 1 red bell pepper shopping list
- 1 pickled jalapeno pepper shopping list
- 4 tablespoons chili powder shopping list
- 1 tablespoon ground cumin shopping list
- 1 tablespoon garlic powder shopping list
- 1 tablespoon hot paprika shopping list
- 16 ounces unsalted butter shopping list
- 1 bunch cilantro shopping list
How to make it
- Thaw and drain frozen corn kernels.
- Heat a large skillet over medium high and add 4 ounces of butter.
- Add chili powder, paprika, cumin and garlic powder and fry 30 seconds to release oils.
- Add finely diced onions, peppers and jalapenos then sauté until onions caramelize.
- Remove mixture from skillet and set aside.
- Add remaining butter and stir in thawed corn kernels.
- Sauté corn 8 minutes until corn is hot and beginning to soften.
- Return onion and pepper mixture to skillet and combine well with corn.
- Remove from heat and add chopped cilantro and stir well then serve hot.
