How to make it

  • Thaw and drain frozen corn kernels.
  • Heat a large skillet over medium high and add 4 ounces of butter.
  • Add chili powder, paprika, cumin and garlic powder and fry 30 seconds to release oils.
  • Add finely diced onions, peppers and jalapenos then sauté until onions caramelize.
  • Remove mixture from skillet and set aside.
  • Add remaining butter and stir in thawed corn kernels.
  • Sauté corn 8 minutes until corn is hot and beginning to soften.
  • Return onion and pepper mixture to skillet and combine well with corn.
  • Remove from heat and add chopped cilantro and stir well then serve hot.
