How to make it

  • Thoroughly mix all ingredients in a large bowl.
  • Spoon mixture onto hot griddle and spread into ¼ inch pancakes.
  • Cook about 8 minutes each side or until pancakes are browned and crispy.
  • Serve with applesauce and sour cream on the side to help cover the pepper and onion taste.

    Those she-bears had a great idea! I've always made my potato pancakes from fresh-shredded potatoes and never thought of using frozen. GREAT idea! So are the Egg Beaters!
