Lovely miniatures, these cakes are made in jelly molds, and decorated whimsically to brighten up your afternoon tea gathering. Kids will also love these at parties!

Ingredients
  • 1 1/2 cups cake/pastry flour
  • 1 cup cocoa powder
  • 1/2 tsp sea salt
  • 3/4 cup raw sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 whole egg
  • 3/4 cup water
  • 1/2 cup olive oil
  • 1 tsp pure vanilla extract

Directions
  1. Combine all dry ingredients, and mix well
  2. Add the wet ingredients and mix thoroughly
  3. When fully mixed, the batter should be thick, and not easily fall from the spoon.
  4. Preheat oven to 350*F
  5. Oil or butter the mini-pans
  6. Fill each mini-pan a little over half full to allow for even expansion
  7. Place filled pans on a cookie sheet.
  8. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow cakes to cool completely in their pans, then invert and decorate however your fancy takes you!
