Beef Galette

- 2 tbsp butter shopping list
- 1 onion, chopped shopping list
- 1 red bell pepper, chopped shopping list
- 1 cup cremini mushrooms shopping list
- 1 lb sliced deli roast beef shopping list
- 1 cup part-skim ricotta cheese shopping list
- 1 tbsp flour shopping list
- salt & pepper to taste shopping list
- 1 tsp dried marjoram leaves shopping list
- 1 cup shredded low fat swiss cheese shopping list
- 1 unbaked whole wheat pie crust shopping list
- 3 tbsp grated romano cheese shopping list
How to make it
- Preheat oven to 375*F
- In large saucepan, melt butter over medium heat.
- Add onion, red bell pepper, and mushrooms.
- Cook & stir until veggies are tender & liquid evaporates.
- This should take between 10 to 11 minutes.
- Remove from heat & place in large bowl.
- Add beef, ricotta cheese, flour, salt, pepper, marjoram & Swiss cheese.
- Mix gently.
- Roll out pie crust to a 12 inch circle; place on cookie sheet.
- Place beef mixture in center of pie dough, leaving a 2 inch border.
- Gently fold the pie dough edges over the beef mixture, leaving a 4 inch open space in the center.
- Sprinkle with Romano cheese.
- Bake for 20 – 35 minutes, or until the crust is golden brown, and its filling is bubbling.
- Let it stand for 10 minutes, then slice to serve.
