How to make it

  • Cream together all crust ingredients - dough will be stiff.
  • Press dough into a 7x11 pan (I use a glass pan for that additional browning effect).
  • Bake at 350 degrees for 15 minutes.
  • While crust is baking, prepare filling.
  • Beat eggs, and then add sugar, flour and salt.
  • Gently stir in rhubarb; spoon filling carefully over hot crust.
  • Bake for an additional 35 minutes. Cool completely before cutting into bars.

    Love it! I varied step one to ensure a short crust - pulsed flour, sugar and hard butter in food processor to fine crumbs - then pressed into pan. Also, I sprinkled cinnamon and sugar on top before baking. Amazing results - the squares disappeared very quickly!!

    Mornin' Krum, gotta love your Mom, I haven't had rhubarb pie for years, these sound wonderful, with the powdered sugar. Might have to try this one.
    I do have to tell you the last batch of aebleskivers turned out wonderful (it was my spice)I think it just dyed on the shelf. I'm ready for the toss-up!
