A quick easy cake to make but tastes delish........i changed it a bit to my liking and i used also key lime instead of lime juice i think it tastes better i love key lime!!!........ ive also tried this using a boughten sugar cookie crust and it was delicious too so you can do it either way. Ingredients
- 2- egg whites, at room temp............. shopping list
- 1/2- teaspoon baking powder shopping list
- 1- cup- all-purpose flour shopping list
- 3/4- cup sugar shopping list
- 1 1/2 tablespoon grated limes peel shopping list
- 1- teaspoon baking powder shopping list
- 1/4- teaspoon salt shopping list
- 1/3- cup milk shopping list
- 1/4- cup shortening shopping list
- 2- tablespoons key lime juice shopping list
- *********************************** shopping list
- TOPPING................. shopping list
- 1/4- cup sugar shopping list
- 1- tablespoon key lime juice shopping list
How to make it
- Preheat oven to 350 degrees f ..............
- spray a round 9 inch cake pan with non stick cooking spray...........sprinkle lightly with a little flour.........................
- in a small bowl , combine egg whites and 1/2 teaspoon baking powder; beat until stiff peaks form ..........set aside ...............
- in a large bowl, combine all remaining cake ingredients, beat at medium low speed until moistened.........................
- beat 2 minutes at medium speed....................
- gently fold in the beaten egg whites into the batter...........
- pour into the the prepared pan......................
- bake at 350 degrees f... for 27 to 35 minutes or until toothpick ..inserted in center comes out clean ...you know the rule lol...............
- in a small bowl , combine topping ingredients , mix well...................
- spread on hot cake evenly..........
- cool for at least 45 minutes or longer until completely cooled before cutting ................
- 8 servings.................
