Courtesy of Southern Living, January 2009 via myrecipes, this dish sounds astonishingly good to me. You can simply spritz it with lemon juice but the sauce is probably well worth the effort!

  • TILAPIA:
  • 1/2 cup pecan halves
  • 1 (6 ounce) fresh tilapia fillets
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 3 tablespoons butter
  • GOLDEN BUTTER RUM SAUCE:
  • 3 tablespoons butter
  • 1 shallot, minced
  • 1 garlic clove, minced
  • 2 tablespoons rum
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh orange juice
  • 1 teaspoon honey
  • 1/2 teaspoons salt
  • GARNISH:
  • Lemon wedges and parsley sprigs

Directions
  1. TILAPIA:
  2. Process pecans in food processor until very fine.
  3. Sprinkle fish fillets with salt, garlic powder and pepper.
  4. Dredge fish in pecans.
  5. Melt butter in large nonstick skillet over medium high heat.
  6. Add fish and cook 3 to 4 minutes per side until well browned and fish flakes with a fork.
  7. SAUCE:
  8. Melt 1 tablespoon butter in small skillet over medium high heat.
  9. Add shallots and garlic and saute until shallots are tender.
  10. Reduce heat to low.
  11. Slowly whisk in rum, juices, honey and remaining butter.
  12. Cook, stirring occasionally, 1 minutes.
  13. Serve warm
  14. Garnish fish, if desired.

This is wonderful I just tweeked it by adding unsweeten coconutto the fish for a more topical taste and once tried adding some diced mango to the rum sauce absolulty fab!!!!! and different my friends were amazed thought they were Jamacia.
