Pecan Crusted Tilapia with Golden Rum Butter Sauce

- TILAPIA: shopping list
- 1/2 cup pecan halves shopping list
- 1 (6 ounce) fresh tilapia fillets shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon garlic powder shopping list
- 1/4 teaspoon pepper shopping list
- 3 tablespoons butter shopping list
- GOLDEN butter rum SAUCE: shopping list
- 3 tablespoons butter shopping list
- 1 shallot, minced shopping list
- 1 garlic clove, minced shopping list
- 2 tablespoons rum shopping list
- 2 tablespoons fresh lemon juice shopping list
- 2 tablespoons fresh orange juice shopping list
- 1 teaspoon honey shopping list
- 1/2 teaspoons salt shopping list
- GARNISH: shopping list
- lemon wedges and parsley sprigs shopping list
How to make it
- TILAPIA:
- Process pecans in food processor until very fine.
- Sprinkle fish fillets with salt, garlic powder and pepper.
- Dredge fish in pecans.
- Melt butter in large nonstick skillet over medium high heat.
- Add fish and cook 3 to 4 minutes per side until well browned and fish flakes with a fork.
- SAUCE:
- Melt 1 tablespoon butter in small skillet over medium high heat.
- Add shallots and garlic and saute until shallots are tender.
- Reduce heat to low.
- Slowly whisk in rum, juices, honey and remaining butter.
- Cook, stirring occasionally, 1 minutes.
- Serve warm
- Garnish fish, if desired.
