Chicken Cobbler Casserole Recipe

Ingredients

6 tablespoons butter, melted and divided

4 cups cubed sourdough rolls

1/3 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

2 medium sweet onions, sliced

8 ounces fresh mushrooms, sliced

1 cup white wine

1 (10.75 ounce) can cream of mushroom soup

1/2 cup drained and chopped jarred roasted peppers

2 1/2 cups cooked chicken, shredded

Directions

Preheat oven to 400 degrees F..

Toss 4 tablespoons melted butter with the roll cubes, Parmesan cheese and parsley and set aside.

Saute onions in remaining 2 tablespoons butter in large skillet over medium high heat for 15 minutes OR until golden brown.

Add mushrooms and saute for 5 minutes.

Stir in wine, soup, roasted peppers and chicken.

Cook, stirring constantly, for 5 minutes OR until bubbly.

Spoon mixture into a lightly greased 9" square baking dish.

Top evenly with bread mixture.

Bake for 15 minutes OR until golden.

I think that Southern Living is one of the very best out there and this dish just helps their push to #1, nym! It's not so very different from a chicken with dumplings on top but oh my! doesn't the word "cobbler" work its magic? Enjoy..
