Ingredients
  • 2-10 oz. pkg. frozen chopped spinach
  • 1/2 stick butter
  • 2 tbls. flour
  • 1/2 cup evaporated milk
  • 8-10 oz. pepper jack cheese, shredded
  • 2 tbls. onion, finely chopped
  • 1 tsp. Worcestershire sauce
  • 3/4 tsp. celery salt
  • 3/4 tsp. garlic powder
  • 1/2 tsp. pepper
  • 1/4 tsp. lemon juice
  • 1/4-1 tsp. hot sauce (add according to taste)
  • 1/2 cup buttered breadcrumbs

Directions
  1. Preheat oven to 350
  2. Grease 1 quart casserole dish
  3. Cook spinach according to pkg. directions
  4. Drain, reserving 1/2 cup liquid
  5. In saucepan, melt butter over low heat
  6. Add flour, stirring until smooth
  7. Cook for a minute, stirring constantly
  8. Add spinach, liquid, and all other ingredients, except breadcrumbs
  9. Stir until smooth
  10. Pour into casserole dish
  11. Sprinkle with breadcrumbs
  12. Bake 25 minutes
