Creamed Cabbage From Pennsylvania Dutch Country Recipe
Though I now live in Canada, my family is from Pennsylvania. My aunt Rachel was raised Amish until she married into the family. This is a dish she makes often, and it's so good. Serve over peeled, par boiled potatoes.

Ingredients
  • 1/2 head of cabbage, shredded
  • 1 heaping Tbl. shortening (ie Crisco)
  • 3 Tbl. sugar
  • 2 Tbl. vinegar
  • 1 Tbl. flour
  • 1 egg
  • 1 c. water

Directions
  1. Place shredded cabbage in pot with a pinch of salt, shortening and enough of water to cover half way.
  2. Cover and cook over medium-high heat until cabbage is soft.
  3. Mix sugar, vinegar, flour, egg and water in small bowl.
  4. Add to cabbage and cook until thick.
  5. NOTE: the amount of sugar and vinegar can be adjusted to meet your individual tastes.
