Pepper Jack Artichoke Dip

Easy and different warm dip with artichokes. Love the red pepper and pepper jack cheese. Easily cut in half for a smaller group (bake in 8x8 pan)

Preheat oven to 4o0
In medium bowl mix artichokes, mayo and 2 c cheese
Spread into ungreased 13x9 ungreased baking dish
Ina small bowl, mix remaining 1/2 c cheese and the bread crumbs; sprinkle over artichoke mixture
Bake 10-12 minutes or until thoroughly heated
Garnish with chopped red bell papper and parlsey
Serve with melba toast
