How to make it

  • French Toast
  • Beat eggs, milk, vanilla and salt until smooth.
  • Heat griddle or skillet over medium-low heat or to 375 degrees.
  • Grease griddle with butter or cooking spray, if needed. (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.)
  • Dip bread into egg mixture.
  • Place on griddle.
  • Cook about 4 minutes on each side or until golden brown.
  • Remove from griddle and top with sliced banana and a sprinkle of coconut.
  • Serve with coconut syrup.
  • coconut Syrup:
  • Combine all ingredients in a small heavy saucepan.
  • Bring to a boil, reduce to a simmer and cook 20 minutes, stirring occasionally.
  • Transfer to a blender or use an immersion blender and puree until smooth.
  • Serve immediately.
  • Coconut syrup can be stored in the refrigerator 2 weeks and reheated when needed.
  • Yield: 2 cups
