I had given up sugar for a week. That, along with wanting something a little heartier for breakfast (other than a piece of fruit) led to this tummy filling treat. This dish reminds me the Callaloo I had while in Jamaica.

I made this tonight and it is very good! I love all the flavors of the spinach, garlic, onion, bacon and the spicy kick of the red pepper flakes (I only used 1/4 tsp because I'm whimpy that way!)...this is a really nice way to dress-up plain old scrambled eggs!!! I added my photo!
