  • Base:
  • 1 10 inch flour tortilla
  • Bean Layer:
  • 1/4 cup black beans, drained and rinsed
  • 1-2 tablespoons olive oil
  • 1 clove minced garlic
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • Pinch Kosher salt and fresh ground pepper to taste
  • Rice Layer:
  • 1/3 cup leftover white rice
  • 2 ounces cheddar cheese, grated
  • 2 tablespoons sour cream
  • 2 tablespoons finely chopped spanish olives
  • 1/4 teaspoon of Polly's Signature Spice blend (http://www.grouprecipes.com/68537/pollys-signature-spice-blend-in-haiku-format.html) or seasoned salt
  • 1 tablespoon freshly chopped cilantro
  • Marinade:
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon lime juice
  • A pinch of kosher salt and fresh ground black pepper
  • 1 tablespoon freshly chopped cilantro.
  • 6 medium to large shrimp, peeled and deveined
  • 1/4 cup sliced red onion
  • Several slices red pepper
  • 1/4 cup finely diced mango.

Directions
  1. Prepare marinade as directed, stirring well to blend thoroughly.
  2. Toss shrimp and red onion into marinade and set aside.
  3. Meanwhile, process ingredients for black bean spread in food processer or blender until smooth.
  4. Spread bean mixture on the flour tortilla
  5. Gently mix all of the ingredients for the cheesy rice and spread over the top of the black bean mixture.
  6. Arrange shrimp and red onion on top of rice layer.
  7. Add red pepper slices and mango
  8. Drizzle with any leftover marinade.
  9. Bake in a 425 oven for approximately 10 minutes. Switch oven to broil and cook for an additional 3-5 minutes.
  10. Garnish with a fresh cilantro sprig and serve.

I'm not sure what makes this dish a Pizza, but there are plenty of other reasons for me to like it. This sounds very tasty for a back porch Margarita adventure
