Refugee Shrimp Tortilla Pizza for One or Two

- Base: shopping list
- 1 10 inch flour tortilla shopping list
- Bean Layer: shopping list
- 1/4 cup black beans, drained and rinsed shopping list
- 1-2 tablespoons olive oil shopping list
- 1 clove minced garlic shopping list
- 1/2 teaspoon cumin shopping list
- 1/4 teaspoon cayenne pepper shopping list
- Pinch kosher salt and fresh ground pepper to taste shopping list
- rice Layer: shopping list
- 1/3 cup leftover white rice shopping list
- 2 ounces cheddar cheese, grated shopping list
- 2 tablespoons sour cream shopping list
- 2 tablespoons finely chopped Spanish olives shopping list
- 1/4 teaspoon of Polly's Signature spice blend (spice-blend-in-haiku-format.html">Pollys Signature spice Blend In Haiku Format) or seasoned salt shopping list
- 1 tablespoon freshly chopped cilantro shopping list
- Marinade: shopping list
- 2 tablespoons olive oil shopping list
- 1/2 teaspoon cumin shopping list
- 1/2 teaspoon red pepper flakes shopping list
- 1 teaspoon lime juice shopping list
- A pinch of kosher salt and fresh ground black pepper shopping list
- 1 tablespoon freshly chopped cilantro. shopping list
- 6 medium to large shrimp, peeled and deveined shopping list
- 1/4 cup sliced red onion shopping list
- Several slices red pepper shopping list
- 1/4 cup finely diced mango. shopping list
How to make it
- Prepare marinade as directed, stirring well to blend thoroughly.
- Toss shrimp and red onion into marinade and set aside.
- Meanwhile, process ingredients for black bean spread in food processer or blender until smooth.
- Spread bean mixture on the flour tortilla
- Gently mix all of the ingredients for the cheesy rice and spread over the top of the black bean mixture.
- Arrange shrimp and red onion on top of rice layer.
- Add red pepper slices and mango
- Drizzle with any leftover marinade.
- Bake in a 425 oven for approximately 10 minutes. Switch oven to broil and cook for an additional 3-5 minutes.
- Garnish with a fresh cilantro sprig and serve.
