Cabbage Soup Recipe
This wonderful soup is perfect for Sunday afternoons!

Ingredients
  • 1/2 head of cored and coarsely chopped cabbage
  • 1 (14.5 oz.) can of talian-style drained and diced stewed tomatoes
  • 2 cloves of chopped garlic
  • 2 qts. of water
  • 4 tsp. of chicken bouillon
  • 3 tbsp. of olive oil
  • 1/2 chopped onion
  • 1 tsp. of salt, or to taste
  • 1/2 tdp. of black pepper, or to taste

Directions
  1. First add olive oil to a large pot, over medium flame.
  2. Saute the garlic and onion until onions are yellow, approx. 5 min.
  3. Now pour in the water, bouillon, salt, and pepper.
  4. Let this come to a boil and drop in the cabbage.
  5. Cook this until the cabbage wilts, approx. 10 min.
  6. Then add tomatoes, letting flame rise around 10 to 15 min.
  7. Stir constantly until flavors melt together. Enjoy!

I found this recipe categorized under 'Vegetarian'. Not sure if Chicken bouillon can be considered as a veggie ingredient after all. The community might want to rethink regarding its categorization.


I'm almost vegetarian but I still had chicken base in my fridge. I didn't have a can of tomatoes so I added some tomato sauce that I had a bottle of. It's good to find a recipe that includes most of the ingredients that I have in the fridge or pantry.
I added a lonely carrot that was sitting in the fridge. Now -- to taste it!.... It's good. Thank you, Winslow


Excellent post! Will be making this tomorrow... those 8 servings may soon be only one... in my bowl! I'll just sub in veggie stock, no big deal!


I am going to try this and maybe tweak a couple things, but I always like to keep it simple so lets see. So far most everyhting in here looks really yummy and simple. I'll tell you what I do to it if I change some things!!


Excellent recipe...very easy to make. I used a whole small savoy cabbage, and it turned out great. Not sure why you'd drain the stewed tomatoes...wouldn't you want to use that juice too? I only had 2 packets of chicken boullion in the cupboard, but it still worked. I did eventually add in some cubed cooked chicken breast, but with or without it, it tastes great. Reminds me of cabbage rolls. My fussy family liked it too!

Just what I was looking for.If a thinly sliced sausage just happens to fall into the pot by mistake, that's also OK


Looks easy and delicious, I use the "better than bouillion" frequently in many recipes and it works just fine. The "sausage falling into the pot" is OK too.


My husband LOVES a good cabbage soup and this one passed the test!

A flavorful soup but odd to my palate. This is my first cabbage soup, ever. I doubled the recipe and had to increase some of the times.

Fried up a pack of bacon and used its drippings instead of using olive oil.

Alterations


Though this recipe is noted under vegetarian, there is a a wonderful product I found to substitute chicken broth/bouillon. It is called Better Than Bouillon vegetarian No Chicken Base. It is sold in 8oz jars and 1 teaspoon of this base equals to one bouillon cube. Excellent stuff! We have a Super Wal-Mart and an Albertsons that keep this on stock in their Soup Isle
