Ingredients
  • 5 cups of cooked rice (preferably 1 day old)
  • 1 lb shrimp, cut into bite sized pieces
  • 1/2 lb squid, cut into bite sized pieces (boil beforehand if raw) - this is to avoid unnecessary moisture
  • 1 TBS minced peeled fresh ginger
  • 6 stalks green onions, slice
  • 1 Cup Frozen peas
  • 1-Cup Sliced Mushrooms
  • 1 Cup diced carrots
  • 1 Cup sliced celery
  • 6 cloves garlic, minced
  • 4 eggs, beaten
  • Soy sauce to taste
  • 2 TBS rice vinegar
  • 1 TBS crushed red pepper (optional)
  • Pepper to taste
  • Dash of sesame oil

Directions
  1. Coat your wok or pan with oil and swirl around.
  2. Once hot, pour in the egg mixture and scramble until almost set but not quite.
  3. Remove from pan and place in a separate plate.
  4. Heat up another tablespoon of oil and swirl around to coat pan.
  5. Sauté carrots & celery till hot but crisp, garlic, ginger and green onions till fragrant.
  6. Add mushrooms, shrimp and squid (or other ingredients you may choose) and sauté together.
  7. Add about 4 TBS of soy sauce and a dash of sesame oil.
  8. Spoon the cooked rice (break it up with a spoon beforehand to minimize lumps) into the wok and fry for a little bit.
  9. Add the scrambled egg and mix thoroughly with the rice.
  10. Add in more soy sauce if needed.
  11. Add pepper and a dash of sesame oil
  12. Mix rice around in the wok until the rice is well coated.
  13. Serve hot. Garnish with some sliced green onions.

My mind was lost long ago, where is my hotel? However I am glad I found this recipe. Thanks.


I had to change a few things because squid take a long time to catch around here. And I had to use up vegies from my fridge. In the end my husband said it was the best fried rice he ever ate. He is going to name his hotel after me.


What a great recipe. I love rice and seafood. I'm marking this down for a tryout some time.
