This is my favorite restaurant in Seattle and this is my favorite dish. I found the recipe online in their site and am now sharing with you. If you like mussels, spice and Thai - you'll love this!

Ingredients
  • 1 cup coconut milk
  • 2 teaspoons fresh lime juice
  • 1 teaspoon red curry paste
  • 2 teaspoons Thai fish sauce
  • 2/3 cup sake
  • 1 teaspoon minced garlic
  • 1 teaspoon minced fresh ginger
  • 1 teaspoon chopped fresh basil
  • 2 pounds Penn Cove mussels, cleaned and debearded
  • 2-4 basil sprigs (for garnish)

Directions
  1. In a large bowl, whisk together coconut milk, lime juice, curry paste, fish sauce, sake, garlic, ginger and basil.
  2. Heat a heavy saucepan over high heat for about 30 seconds. Add mussels and broth. Bring to a boil and reduce heat. Cover and simmer for about 5 minutes, or until mussels fully open.
  3. Divide mussels into bowls and serve with broth and plenty of crusty bread.

I love the Thai spices, but sorry not a fan of mussels. We love Ray's Boathouse too! I can make this with tilapia though! Great recipe, Val. 5er! ;')

Hey Valinken! If I get a chance, I would love to try this beautiful looking dish at Ray's Boathouse. Seeing as I am just a little too far away for that, I will follow your fabulous lead with a nice curry paste! Do you prefer the yellow or maybe a hot red with this?

This sounds exceptionally good! A really great combination of flavors. I do think that it would be great to do with shrimp or fish, or even calamari! I've GOT to try this! (My sister's going to love it, too!

This is a great recipe...it's so close to one I make, I add a couple of Thai chilies to the mix. It also works great with clams.
