A twist on stuffed shells - Jumbo pasta shells stuffed with a salmon, spinach and cottage cheese mixture is baked in garlic and butter. (Because I ran out of inspiration...originally wanted to try a lemon-dill sauce. Sometimes it pays to be lazy!)

Oooooh. . . I have some leftover salmon from last night - this could be a plan in a couple days. I love it and looks good too! Thanks Christine. ;') (I wouldn't have seen this if I hadn't looked in Refugees group ; ( - I thought we were friends? )

This really appeals to me and I'm passing it on to mom (131Joyce) as she cooks salmon more than I. This is a great submission for our groups little "shell game"!

Picked this up in the Recipe Swap and made it, tonight. I did use manicotti shells, cus that's what I had, and I used fresh salmon fillets. What I did was just let the salmon bake in the garlic butter, let it cool a bit, then proceeded with the recipe. These were so good, and very different way to have pasta...no tomato, and while it's a white stuffing, it still tastes different from any I've had... it's a great combo, and it was gobbled up! :) The ONLY thing I would do differently next time is add a squirt of lemon juice both to the butter and the stuffing mixture, but that's cus I miss the acid element when it's not there...not because this dish "needs" it. :) I added my photo, too! :)
