How to make it

  • Parboil shells according to package directions until just al dente. Rinse in cold water and set aside.
  • Preheat oven to 350*F. Place butter and garlic in a 9" x 9" (or similar sized) baking dish; place in oven while it is preheating, checking often to make sure garlic doesn't burn. When butter is melted and infused with garlic, remove from oven.
  • In medium bowl, combine cottage cheese, sour cream, and egg; stir in salmon, spinach, thyme and dill, then season with salt and pepper.
  • Fill shells with salmon mixture and place in baking dish.
  • Sprinkle with mozzarella and parmesan.
  • Cover with foil and bake 20 minutes. Remove foil and bake another 15 to 20 minutes or until cheese is bubbly.

    Picked this up in the Recipe Swap and made it, tonight. I did use manicotti shells, cus that's what I had, and I used fresh salmon fillets. What I did was just let the salmon bake in the garlic butter, let it cool a bit, then proceeded with the recipe. These were so good, and very different way to have tomato, and while it's a white stuffing, it still tastes different from any I've had... it's a great combo, and it was gobbled up! :) The ONLY thing I would do differently next time is add a squirt of lemon juice both to the butter and the stuffing mixture, but that's cus I miss the acid element when it's not there...not because this dish "needs" it. :) I added my photo, too! :)
