How to make it

  • Cut potatoes in half,add to a pan of boiling water or steam them,until soft,about 15 mins.
  • Meanwhile, fry the bacon until crispy;take out of pan. Add peas to the frying pan and turn off heat; stir in and leave 5 mins.
  • Drain potatoes well. Put back in pan and dry over low heat,then crush them with fork or masherbut not too finely.
  • Snip the bacon into the potatoes and add the peas,parsley and plenty of seasoning.
  • Form mixture into 8 small cakes,each about 3" in diameter.
  • Heat oil in alarge frying pan. Add potato cakes and cook for 3-4 mins. on each side till heated through.

    Its 3 and 1/2 ounces of peas and the same for the bacon, Shai. 1 and 1/4 lbs. of potatoes.
