Armadillo Eggs

- 20 jalapeno peppers shopping list
- 4 ounces cream cheese shopping list
- 1/2 cup sharp cheddar cheese, shredded shopping list
- 1/2 cup mozzarella cheese, shredded shopping list
- 1/8 teaspoon salt shopping list
- 1/4 teaspoon chili powder shopping list
- 8 ounces bulk pork sausage (any flavor) shopping list
- 8 ounces sharp cheddar cheese, shredded shopping list
- 1 1/2 cups Bisquick baking mix shopping list
- 2 eggs, beaten shopping list
- 1 package "Shake 'n' Bake" coating for pork shopping list
How to make it
- Remove seeds and membranes from peppers.
- (I find it easier if you just cut them in half, keeping the two halves near each other so they can be put back together after stuffing)
- Beat together cream cheese, 1/2 cup cheddar cheese, 1/2 cup Mozzarella, salt and chili powder.
- Fill peppers with cheese mixture.
- Mix together sausage, 8 ounces cheddar cheese and Bisquick.
- Take this mixture and form around each pepper, enclosing completely.
- Dip into beaten egg and roll in coating mix.
- Arrange on greased baking sheet.
- Bake at 350 degrees for 25 minutes.
