Mushrooms And Shrimp Penne In Bacon Tomato Cream Sauce Recipe

This came about by accident just combining different traditional sauces for pasta. This comes together very easy, and it's rich enough to need nothing more than a simple salad and bread to complete the meal!

Ingredients
  • 1lb penne pasta
  • 1/2lb bacon, diced for frying(see photo for how I prepare bacon for such dishes)
  • 8oz fresh mushrooms, sliced
  • 1 bell pepper
  • 2-3 green onions, sliced
  • 3-4 cloves garlic, minced
  • 1 can Italian style tomatoes
  • 1/2 stick butter
  • 2T fresh basil, chopped
  • 1 block cream cheese, softened
  • 1lb fresh shrimp, peeled and deveined

Directions
  1. Cook bacon over medium heat until crisp.
  2. Remove bacon from pan, leaving grease
  3. Add butter to pan
  4. Add mushrooms, bell pepper, tomatoes and garlic to pan and saute for about 5 minutes.
  5. Boil water for pasta, and cook per package directions.
  6. Add cream cheese to veggies and heat through while pasta cooks. Stir frequently to completely melt cream cheese.
  7. Add shrimp, green onions, basil and bacon and continue to cook until shrimp turns pink.
  8. In large bowl, combine drained pasta with sauce and toss to combine.
  9. Serve with fresh grated Parmesan cheese, if desired.

Keni!!!! What a delicious accident LOL! This was soooo good! I didn't have any penne so I used WW thin spaghetti. I honestly haven't cooked shrimp in almost 2 yrs b/c it never used to taste or turn out right for me but I think it was just where I was buying my shrimp. This is a great recipe to start back up on! Thanks once again!
