oriental Gingered Apple Salad

This luscious salad (created by my mother) combines crisp apples, crunchy water chestnuts, chewy dried cranberries and other ingredients with a creamy dressing. It is hard to stop eating this healthy salad!
Ingredients
- 3 cups diced unpeeled apples shopping list
- 1 (8 oz) can water chestnuts, drained and diced shopping list
- 3/4 cup finely diced celery shopping list
- 1/2 cup dried cranberries shopping list
- 1/2 cup lowfat vanilla yogurt shopping list
- 1/4 cup light mayonnaise shopping list
- 1/2 tsp. ground ginger shopping list
- 2 Tbs. sugar shopping list
- 1/8 tsp. salt shopping list
- 1/4 cup chopped pecans, toasted shopping list
How to make it
- In a bowl, combine apples, water chestnuts, celery, and cranberries.
- Stir together yogurt, mayonnaise, ginger, sugar, and salt.
- Pour over apple mixture and toss to coat.
- Sprinkle with pecans.
