How to make it

  • Place cubed onion and halved tomatoes on a baking sheet. Brush with olive oil, salt and pepper. Broil for 4 minutes.
  • Turn onions and tomatoes over, brush other side with olive oil and salt and pepper. Broil for another 3-5 minutes, or until soft.
  • Put tomatoes and onions in blender and blend until relatively smooth.
  • Coat soup pot with olive oil (twice around the pot), saute garlic for a few minutes and then add chicken stock.
  • Add tomato mixture and bring to a boil. Once boiling, add heavy cream and basil.
  • Simmer for a few minutes and then serve with sandwiches.

    Gawd! I love my immersion blender. Didn't feel the need to strain the soup. It wasn't pure smooth soup but the tiny grainyness(sp) gave it a little body. I also found the tomato flavor to be a little weak, like yoyoyemen, so I added a 6 oz. can of tomato paste. Probably didn't need the entire amount of tomato paste but I use it so rarely it would have gone bad before I cycled back to it.

    Mother is down with a cold and enjoyed it. Would have made chicken soup but we had tomatoes from the garden I wasn't about to let go to waste. Now they've gone to waist.

    Here's the game plan. The roasted tomatoes and onion go into the broth and pot in their chunked state; boiled for the time; blended with emersion blender; strained; basil and cream added.

    Got the garlic a little too golden brown, if you know what I mean, while turning and brushing the tomatoes and onion. Hope it turns out well.

    This was perfect with a grilled cheese sandwich to dip in it! Next time I may try it without the cream or with a little less chicken stock so the tomato flavor is a bit stronger. But definitely a 5. Delicious. It also didn't take too long or use any canned ingredients, which I'm really happy about!
