Roasted Tomato Soup

- 10 plum tomatoes, halved shopping list
- 3/4 red onion, cubed shopping list
- 3 cloves garlic, crushed shopping list
- 1 qt chicken stock shopping list
- 1 cup heavy cream shopping list
- 10 fresh basil leaves, chopped shopping list
- olive oil shopping list
- salt & pepper shopping list
How to make it
- Place cubed onion and halved tomatoes on a baking sheet. Brush with olive oil, salt and pepper. Broil for 4 minutes.
- Turn onions and tomatoes over, brush other side with olive oil and salt and pepper. Broil for another 3-5 minutes, or until soft.
- Put tomatoes and onions in blender and blend until relatively smooth.
- Coat soup pot with olive oil (twice around the pot), saute garlic for a few minutes and then add chicken stock.
- Add tomato mixture and bring to a boil. Once boiling, add heavy cream and basil.
- Simmer for a few minutes and then serve with sandwiches.

This was perfect with a grilled cheese sandwich to dip in it! Next time I may try it without the cream or with a little less chicken stock so the tomato flavor is a bit stronger. But definitely a 5. Delicious. It also didn't take too long or use ...more
