How to make it

  • Cook pasta to an al dente texture and drain, setting aside 1/4 cup pasta water.
  • Heat large skillet over moderate heat.
  • Saute ham in a drizzle of oil until it warms through and begins to brown.
  • Add measured olive oil, garlic, onion and crushed pepper flakes and saute 3-4 minutes.
  • Add wine to the pan and reduce by half, 2 minutes.
  • Seperately, beat together egg yolks, cheese and pepper.
  • While whisking vigorously, stir in a ladle of the boiling pasta water.
  • Add hot pasta to pan containing garlic mixture.
  • Toss pasta with ham, add egg mixture and stir well 1 minute. Take off heat.
  • Continue to mix pasta well until sauce is thickly coating the pasta.
  • Adjust seasonings with salt and pepper and serve.

    YUM! I'm fixing my chicken carbonara tomorrow night (one of my son's favorites)...but I'm going to try yours instead, just add chicken. I love the way you cut out ALL the heavy cream. I always fear an immediate heart attack when I fix my recipe! Thanks for this great recipe!
