My Fav New England Clam Chowder Recipe

Ingredients
  • 4 ounces salt pork (cut into bite size pieces and fry and drain on paper towel
  • 2- tblspn unsalted butter
  • 2-medium onions(diced)
  • 2-cloves garlic(minced)
  • 2-stalks celery(diced)
  • 2-tspn-tyme
  • 2-dried bay leaves
  • 2-pounds potatoes(diced into chunks)
  • 2-bottles clam broth
  • water to cover
  • 11/2 cups heavy cream
  • fresh ground pepper
  • 2-cans whole clams or fresh
  • 2-tblspn chopped flat leaf parsley

Directions
  1. Render in fry pan salt pork let drain on paper towel
  2. in stock pot add butter and saute onions,garlic,celery,tyme,and bay leaves,for 4 minutes on med highheat
  3. add potatoes and clam broth and water to cover,bring to boil then simmer covered for 10 minutes remove from heat add cream and clams
  4. serve in soup bowls top with crispy salt pork and parsley toasted slice garlic baggett on the side

Alterations


I grew up on this stuff and I love it! I make a chowder similar to this and add a bit of fresh corn. Also, used a bit of bacon rather than salt pork. By frying onions and bacon bits in a butter/flour roux, you can use whole milk as a base.

Thanks so much for reminding me! And you can use the same recipes for fresh oysters!
