How to make it

  • Topping: In small bowl, mix (with fork) brown sugar, nuts, 2 tablespoons flour, cinnamon, and butter; set aside.
  • Mix together remainder of ingredients. Put 1/2 of batter in bottom of 10 to 12 muffin cups. Sprinkle 1/2 of topping mix over batter. Cover with remaining batter. Sprinkle with remainder of topping. Bake at 375 degrees for 20 minutes.
  • Variation: Add 1 diced apple to batter.

    I whip up muffins quite a bit as they are a healthy snack for mid-afternnon ,especially with some fruit added .I'll try these with the apple added in .
