Harvest Time Apple Chutney

- 1 kg apples shopping list
- 500g onions ,sliced shopping list
- 2 cups good cider or white wine vinegar --no cheap supermarket nasties ! shopping list
- 12 pimento --(allspice ,sometimes found ready ground ) shopping list
- 12 cloves shopping list
- 2 tsp salt shopping list
- 1/4 tsp cayenne pepper shopping list
- 1.5 cups sugar shopping list
- 1 cup sultanas shopping list
How to make it
- Peel ,core and dice the apples .
- Place in a good sized saucepan with all the other ingredients and cook gently for one and a half hours ,maybe more ,till well cooked .Stir frequently to avoid sticking .I use a simmer mat on a gas stove top to spread the low heat evemnly .
- Prepare 8 small or 4 large jam jars by sterilising in boiling water ,lids as well .I dry them in the oven at 120 degrees Cent and leave there till needed .
- When ready ,pour your cooked chutney into the jars ,leaving a quarter inch head space to enable the cooling chutney to create a vacuum. Screw on the lids .
- Allow to cool ,then wipe clean ,label and store in a cool dry place .I keep mine for up to 2 years . But it never lasts that long .
