Crunchy Chicken Balls With Mayonnaise Sauce Recipe

Ingredients

500 gms chicken mince

1/3 cup mayonnaise -- I hope you make your own ,its so easy !

clove of garlic , mashed

1 finely chopped red Spanish onion.

1/2 cup finely chopped parsley

half dozen Kalamata olives ,depipped and finely chopped

1 small red bell pepper finely chopped

Cup of plain flour .

1 beaten egg

1 cup breadcrumbs

Oil to cook with with ,about 2 cups

Sauce to serve as follows:

1 cup mayonnaise

1/4 cup kalamata olives chopped

Grated zest of 1 lemon .

Directions

Put the chicken mince in a mixing bowl .

Add the mayo ,garlic ,onion,parsley,chopped olives,and bell pepper .

Mix well and roll tablespoons into small balls.

Roll your chicken balls in the plain flour .Then dip into the egg mixture and coat with breadcrumbs .

Place in the fridge for 15 mins to firm up for shallow frying .

Heat the oil in a shallow fry pan ,heavy based is best for this .

When hot ,gently put a few balls at a time in the oil as we don't want it to cool .

Cook for 3 to 4 mins till crisp .

Remove as cooked and drain on kitchen paper .

Mix the other cup of mayo with the olives and lemon zest ,season to taste and serve with the balls .A fresh garden salad on the side will make a delicious quick meal .
