How to make it

  • Put the chicken mince in a mixing bowl .
  • Add the mayo ,garlic ,onion,parsley,chopped olives,and bell pepper .
  • Mix well and roll tablespoons into small balls.
  • Roll your chicken balls in the plain flour .Then dip into the egg mixture and coat with breadcrumbs .
  • Place in the fridge for 15 mins to firm up for shallow frying .
  • Heat the oil in a shallow fry pan ,heavy based is best for this .
  • When hot ,gently put a few balls at a time in the oil as we don't want it to cool .
  • Cook for 3 to 4 mins till crisp .
  • Remove as cooked and drain on kitchen paper .
  • Mix the other cup of mayo with the olives and lemon zest ,season to taste and serve with the balls .A fresh garden salad on the side will make a delicious quick meal .
