How to make it

  • Soak your choice of beans overnight in fresh water .
  • Next day rinse and drain ,they will have swelled to a good plump bean ready for cooking .
  • Preheat the oven to 160 Cent ,thats about 325 F .
  • Place your beans in a pot ,cover with water ,bring to the boil ,then rinse and drain again to give you a good clean start .
  • Heat the oil in a large enamelled cast iron casserole or your equivalent -say a dutch oven or slow cooker .
  • Saute the onion ,garlic ,carrot and bacon
  • Wwhen the onion has softened and bacon is sizzling ,add the peppers.
  • Add the tomatoes and the beans and all remaining ingredients except the maple syrup .
  • Mix well .Add sufficient cold water to cover the bean mix by about 1 and a half inches .
  • Cover the casserole tightly ,using baking paper if needed , and cook uncovered for 2 hours ..
  • Check after 2 hours ,stir well and pour in the maple syrup .Make sure it is still wet enough .If too dry ,add a little water and reduce the temperature a little .
  • Cook for a further 2 hours and check again .
  • If satisfied with the cooking ,stir in fresh ground black pepper and serve .
  • I sometimes at this point ,poke in a few good quality German -style frankfurters to warm through for a few minutes back in the oven .
  • A hearty dish worthy of serving to your best friends , with some good hearty wine or even cold beers ,to enjoy on a winters night . .
  • Plenty of sourdough bread to mop up, the sauce !

    My bean recipe is from my grandmother too. They are a sweet Boston baked bean recipe. I am going to try this one for something different. It sounds very good too.

    When I saw this recipe in your recipe list, I thought; yeah right, ..... someone in Shepparton thinks that they have an original baked beans recipe..... What are the American folk here going to think about that. To my surprise, you have. Well, I had looked a few weeks ago for a baked beans recipe and had some troubles finding one, that appeared to be traditional or authentic. I really like from scratch cooking. This recipe even concludes on a high note for me, with the mopping up with sourdough. Things don't get much better than that! Thanks. I've saved it and I'll get the beans during the week.
