Taxco Chicken Breasts Recipe
Tex-Mex style chicken breast. Creamy,cheesey and delicious. Strange name;don't know where it came from.

  • 4 chicken breast halves,boned and skinned
  • salt and pepper
  • 1 Tbs cumin
  • 2 Tbs flour
  • 3 Tbs butter
  • 2 cloves garlic,chopped
  • 1/2 c chicken broth
  • 3 Anaheim or California chilies,roasted,peeled and chopped or small (3oz) can mild green chilies
  • 1 c sour cream
  • 1/2 c shredded cheese (combination of Monteray Jack and Parmesan)

Directions
  1. Season chicken with salt and pepper to taste and 1 tsp. cumin. Dredge in flour. Melt butter in skillet,then saute chicken a few mins. on each side. Remove from pan.. Add garlic and saute a min. or two,then add broth,chilies and remaining cumin. Cook until liquid has almost evaporated.
  2. Reduce heat,then stir in sour cream and cheese and cook over low heat till cheese has melted. Return chicken to pan and heat thoroughly being careful not to let sour cream sauce boil. Serve immediately

This sounds great and it gets my 5 forks! Taxco is a Mexidan town that is pretty well known for silver mines. I can't wait to try this. My sons and I love this kind of thing!


Had this for dinner tonight and it is seriously good. Mildly spicy using canned chilies as I did, but very flavorful. If you haven't tried this one, do so.

One question, the recipe lists two cloves of garlic, but the directions don't say what to do with them. My wife hates garlic, so she said, "just leave out out." I did, all the while guessing that it was supposed to go in with the broth and that to my taste it would be better with it. But it was, as I said, very tasty without it.
