Poblano Spaghetti And Garlic Shrimp

- 1/2 lb thin spaghetti, cooked shopping list
- 2 poblano peppers, roasted, peeled and seeds removed, chopped shopping list
- 4 oz cream cheese shopping list
- 1/2 cup half & half shopping list
- 1/2 sweet yellow onion, finely chopped shopping list
- 2 TBSP olive oil shopping list
- 1/2 cup parmigiano-reggiano cheese shopping list
- 4 cloves garlic, minced shopping list
- 2 TBSP unsalted butter shopping list
- 1 lb large shrimp, peeled & cleaned shopping list
- juice of half a lemon shopping list
- Kosher salt and black pepper, to taste shopping list
How to make it
- In a large saute pan, heat olive oil and sauté onion & half of the garlic until translucent & soft. Add the chopped poblanos and saute briefly. Add the half & half and cream cheese. Stir until all the cream cheese melts. Take off heat and add the parmesan cheese.
- Pour sauce from the pan into a food processor or blender and puree until smooth.
- Pour sauce back into the pan. Season with salt and pepper to taste. Simmer for 10-15 minutes stirring constantly. Add cooked pasta to the pan and toss to cover it with the poblano sauce.
- Add butter to a large skillet. When it starts to bubble add the remaining minced garlic and shrimp. Season lightly with salt. Cook until it shrimp turn pink, about 4 minutes. Mix well with garlic. Squeeze lemon juice on top of shrimp.
- Serve shrimp over pasta, garnish with cilantro or parsley and enjoy!
