Pineapple Squares

A delicious dessert..... i love pineapple ...enjoy............. courtesy amish cooking..........
Ingredients
- 1- large can crushed pineapple shopping list
- 3/4 - cup sugar shopping list
- 3 - cups flour shopping list
- 5- tablespoons minute tapicoa shopping list
- 2- tablespoons butter shopping list
- 2- sticks of butter/ or margarine shopping list
- 2- egg yolks . beaten ...................reserve egg whites.......... shopping list
- 1- teaspoon salt shopping list
- 1- teaspoon vanilla shopping list
- 1- tablespoon sugar shopping list
- 1/2- cup milk shopping list
How to make it
- Bring pineapple, sugar and tapicoca to a boil........
- cook until thickened........
- remove from heat.........add 2 tablespoons butter
- cool completely.........
- mix flour and 2 sticks butter / margarine as for a pie................
- beat egg yolks, salt, vanilla, sugar and milk
- pour into flour........mix..........
- divide dough in half...........grease pan
- roll out 10 1/2 x 15 ( jelly roll) pan ( cookie sheet)
- spread dough in pan
- and then add filling on top
- roll out remaining dough and put over filling
- brush with egg white........
- sprinkle with 2 tablespoons sugar and ground nuts over the top
- bake at 350 degrees f. for 40 minutes...........
- cool and cut into squares
- serves 10-14
