No Work Spanish Rice Recipe
I made this last night from leftover mild salsa in the fridge and my wife wanting Spanish rice. If you have a rice cooker - and we have a large and small one - it literally takes no more than a minute to throw it together.

Ingredients
  • 1 cup water
  • 1 cup salsa - whatever kind you like
  • 1 cup rice

Directions
  1. Mix all together in a rice cooker.
  2. Cook until done.
  3. (My wife loved it and she has a very selective palate.)
  4. Note: no rice cooker? Put in a pot or pan and cook for 20 minutes or so until all the liquids have been absorbed and rice is tender.

Sounds good, as I had some left over rice in the fridg the other day and spooned some salsa over it, mixed it up and it was really good. You have my 5


I is even better when you cook the rice and the salsa together right from the start... I love to experiment this way and frequently discover great recipes or new ideas for a recipe.

Right now I am working on a crab pate which I will put in a terrine lined with a pie crust... should be a dynamite appetizer?

I make a similar recipe using Vigo Yellow Rice and salsa; topped with chicken breasts and baked, an easy meal! Great post. ~ Natalie
